There’s sustainable food, and then there’s sustainable food.
We noted last week that a new bakery called the Birdbath, run by the owners of City Bakery, was expected to open on 85th Street and Columbus. Tipster Sarah Andress sent in the photo above, showing that the space is already on its way. But we had no idea just how unique this new bakery will be. According to the Birdbath’s site:
“Birdbath Neighborhood Green Bakery is the little sister of City Bakery, and one of the most eco-friendly food businesses on earth. Birdbath serves food that’s made from organic materials, is regionally grown, and seasonal. The bakeries are built from recycled, found, vintage, or sustainable materials. Birdbath is wind-powered, and all of the food is delivered from our main kitchen in bicycle-powered rickshaws. We also give discounts to any customer who arrives by bike, or even skateboard. Birdbath offers breakfast and lunch to go, with desserts and specialty drinks, seven days a week.”
